2 Minute Mayo

This post is going to be short and sweet, just like this recipe! Making your own clean and delish mayo is really easy. A few ingredients thrown in a mason jar, whipped together with an immersion blender, and you've got yourself homemade mayonnaise in under two minutes. How fun! You can watch me make it here.



Mayonnaise is so versatile. Whip up some chicken or tuna salad. Use it as a base to some yummy salad dressings and other sauces. Throw together a BLT dip with some veggies. Give this a try...you won't regret it. I also highly recommend having an immersion blender. It's one of my favorite kitchen gadgets and comes in handy pretty often.



Ingredients

  • 1 cup extra light olive oil (or any other oil you prefer)

  • 1 egg

  • 1 tbsp lemon juice

  • 1/4 tsp salt

  • 1/4 tsp mustard powder

Directions

  • Put all of your ingredients in a mason jar. Submerge your immersion blender and blend, slowly moving the blender stick up to the top a little bit at a time. Cover and refrigerate.

Tips - Using a jar that is just slightly larger than the head of your immersion blender is important. This will not work if your jar is larger than that. This mayo will keep in the fridge thru the same date as your eggs. The stronger the flavor of the oil you use, the stronger the flavor of the mayo. I personally recommend a light tasting olive oil, such as this one.
