I have probably eaten millions of chicken nuggets in my years on this planet. And the number of varieties that are available to us is endless. There is no shortage of convincing marketing tactics that try to get you to feed yourself and/or your kids these (usually) fake meat options either. Fast food joints, restaurants, frozen ones that look like dinosaurs. There's an option for some variety of them on every single kids menu. There are fast food joints that are literally competing for business over who has the cheaper option, who has the better tasting option, who gives away the extra sauce for free, blah blah blah.
The one that bothers me the most is how cost effective they make it seem. Five or six "chicken" nuggets for a buck! However, what are you actually paying for and consuming? I'll leave it up to you to google that one, but it's usually not chicken. If you break down the cost (don't worry I've already done it for you), making them at home can be just as cost effective. With the star of the show actually being chicken. Including the honey mustard dipping sauce that I made, these clean and organic chicken nuggets come in around $6 for an ADULT sized portion (pictured below). If you're feeding your kiddos, you can cut the serving size by at least half, if not in thirds. Eating healthy is absolutely affordable.
I coated the chicken chunks in mayo, crushed up some almond flour crackers as my breading, and threw them in my air fryer for 15 minutes (affiliate link for the air fryer I use and love https://amzn.to/3X2Qldp). Served with a side of sweet potato fries and some honey mustard for dipping, I was able to kick the fast food craving I was having yesterday feeling just as satisfied without the gut rot after. This is truly one I can feel good about and often use it to curb my fast food cravings. Even though I have been able to abstain from fast food for over 6 months now, I am not immune to the subliminal messages and barrage of advertisements that are thrown at me all day long. Ingredients
1 boneless skinless chicken breast
1 tbsp mayo
1 oz almond flour crackers, crushed
1 small sweet potato
salt
pepper
Directions
Crush the crackers into a breadcrumb like consistency.
Cut the chicken breast into bite sized chunks and season with salt and pepper.
Coat the chicken chunks with mayo, and then toss in cracker crumbs until coated.
Spray your air fryer basket with avocado oil, add the chicken to your air fryer and spray the tops of the chicken chunks as well. This will help them brown.
Air fry the chicken at 350° for 15 minutes, shaking the basket a few times throughout cooking process to prevent sticking.
Cut sweet potato into matchsticks, and lightly spray with avocado oil. Season with salt and pepper.
After 5 minutes, add the sweet potato fries to the basket and continue to cook together with the chicken for the remaining 10 minutes.
Remove from air fryer basket and serve alongside your favorite dipping sauce.
Notes
Cut the chicken into whatever shapes or sizes you want. If you prefer tenders or popcorn chicken, go for it! Just adjust the cooking time as needed to get to 165° once cooked. For the sauce, I whisked together equal parts honey and Dijon mustard. Obviously you can switch it out for what your family likes best. Just try to keep it clean! Primal Kitchen BBQ sauces are a good choice.
