Clean Sloppy Joe

Made with clean ingredients, but just as sloppy, these nostalgic sandwiches are still one of my favorites as an adult. And they are surprisingly easy to make from scratch. So why are people still eating the canned garbage that is being sold on shelves? The only reason I could come up with was price. I promise you that these not only taste better, they won't break the bank either.

I did happen to still have some Organic Bread of Heaven rolls here (link and coupon code below), but this mixture is also delicious spooned over a baked sweet potato, in a bowl topped with a pile of coleslaw, or as the filling to a stuffed bell pepper. And the protein base for this can be any variation you want - beef, turkey, chicken, venison, bison, etc. so feel free to use whatever you have on hand or find on sale.

This is one that probably won't have leftovers, but if you do, spooned over some scrambled eggs makes for a pretty tasty breakfast. I try to make enough to at least have lunch ready for the next day, but we often end up eating the whole pan. They are THAT good.


Ingredients

  • 2 tbsp pork fat (or fat/oil of choice)

  • 1 red bell pepper

  • 1 orange or yellow bell pepper

  • 1 lb ground protein (I used turkey)

  • 3/4 cup Primal Kitchen ketchup

  • 1/4 cup coconut aminos

  • 2 tbsp tomato paste

  • 2 tsp granulated garlic

  • 2 tsp onion powder

  • salt and pepper

Directions

  • Over medium heat, heat pork fat in a skillet. Dice your bell peppers and sauté in pork fat until soft, about 4 minutes.

  • Add ground turkey, breaking up with a wooden spoon and cook until browned.

  • Turn heat to low. Add ketchup, coconut aminos, tomato paste and seasonings and stir to combine. Let simmer on low for 10-12 minutes minimum, stirring occasionally. The longer it cooks, the better the flavors will develop.

  • Serve with a side of pickles, coleslaw, or for that true nostalgic feeling - with some Heaven & Earth cassava chips (Amazon affiliate link https://amzn.to/3VAiqal). Or all of the above! My hubby also likes to top with a little Yellowbird Sriracha.
