Eggnog Oatmeal Pancakes

These blender pancakes were originally something I discovered while following @erinliveswhole on Pinterest. And while I have adapted these a bit, I must give credit where credit is due. So thank you Erin! #erinliveswhole


These eggnog oatmeal pancakes are super easy, delish, and not to be reserved for weekends! When I make a batch, I have been known to double the recipe and have them available for "grab and go" during the week - a morning lifesaver at times. And the eggnog makes them a holiday favorite around my house. Pair them with some clean bacon and you've got yourself a breakfast picked straight from my dreams. Just be sure to use glyphosate free oats, like the ones I use from One Degree Organic Foods.



Ingredients

  • 2 cups rolled oats

  • 1 ripe banana

  • 1 egg

  • 1 cup eggnog

  • 1 tbsp maple syrup

  • 1 tsp almond extract

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp nutmeg

  • pinch of salt

Directions

  • Add oats to blender and blend on high until a flour like consistency develops.

  • Add remaining ingredients to the blender and blend until combined.

  • Let batter rest for 5-7 minutes to thicken.

  • Melt ghee or coconut oil on a skillet set to medium low heat.

  • Pour 1/4 cup of batter onto skillet and let cook until bubbles start to form along the outside and the bottom is golden brown.

  • Flip and cook the other side.

  • Repeat until all pancakes are made.

  • Top with butter, syrup, whipped cream, jam, or applesauce- or all of the above.

Notes

Not an eggnog fan? Replace with milk of your choice. No nutmeg? Use cinnamon. No almond extract? Sub vanilla.
