These eggnog oatmeal pancakes are super easy, delish, and not to be reserved for weekends! When I make a batch, I have been known to double the recipe and have them available for "grab and go" during the week - a morning lifesaver at times. And the eggnog makes them a holiday favorite around my house. Pair them with some clean bacon and you've got yourself a breakfast picked straight from my dreams. Just be sure to use glyphosate free oats, like the ones I use from One Degree Organic Foods.
Ingredients
2 cups rolled oats
1 ripe banana
1 egg
1 cup eggnog
1 tbsp maple syrup
1 tsp almond extract
1 tsp baking powder
1 tsp baking soda
1 tsp nutmeg
pinch of salt
Directions
Add oats to blender and blend on high until a flour like consistency develops.
Add remaining ingredients to the blender and blend until combined.
Let batter rest for 5-7 minutes to thicken.
Melt ghee or coconut oil on a skillet set to medium low heat.
Pour 1/4 cup of batter onto skillet and let cook until bubbles start to form along the outside and the bottom is golden brown.
Flip and cook the other side.
Repeat until all pancakes are made.
Top with butter, syrup, whipped cream, jam, or applesauce- or all of the above.
Notes
Not an eggnog fan? Replace with milk of your choice. No nutmeg? Use cinnamon. No almond extract? Sub vanilla.
