Truth be told, I don't love grocery shopping. I feel like the freshness of produce has gone way down hill, it angers me to see the processed shit being sold as "food," and everything is overpriced. So when the option to buy real food at a fair price is available online, I'm generally going to do that.
Butcher Box is one of those options. I don't solely use Butcher Box because I like to be able to grab different proteins as I find inspiration or sales, but my staples pretty much come from there. Every six weeks, a box full of organic/grass fed/sustainably raised protein shows up at my door and I get to do what I love - cook!
When that box of goodness shows up, one of the first things we reach for is the tenderloin tips. This is a meal that you could serve to your family and I guarantee you wouldn't hear a single complaint. It's also another 20 minute dinner and can all be made in one pan. Weeknight winning!
Steak bites are one of my husband's favorites. Why wouldn't they be?! Steak, garlic, mushrooms, butter...all the makings of a perfect meal. He loves them so much, that we had to negotiate who would be taking the leftovers for lunch today. He graciously let me have them. Now the only problem is having to wait until lunch to eat them.

Ingredients
1 lb steak, cut into bite sized pieces
8 oz mushrooms, sliced
4 cloves garlic, sliced
1 tbsp olive oil
6 tbsp butter
2 tsp salt
2 tsp pepper
Directions
Add olive oil and sliced garlic to a cast iron skillet and heat over medium high heat. Let the garlic flavor the oil, cooking until fragrant, about 2 minutes. Add mushrooms and cook until soft, about 4 minutes. Remove garlic and mushrooms from pan.
Generously season the steak bites with salt and pepper. Add to skillet and sear on each side, about 2 minutes per side. Be sure not to overcrowd the pan or you will steam the meat rather than sear. Do this step in batches if you need to.
Add the cooked mushrooms and garlic back to the pan, along with butter. Stir to coat everything with the butter as a melts.
Serve alongside your favorite green veggie. We used frozen green beans that were blanched in boiling water for 3 minutes.
Notes
You can easily use other cuts of beef for this. Sirloin is another great option. Just be sure to cut against the grain (or ask your butcher to do it for you). This is also an amazing breakfast option. Just add some eggs and you've got yourself the start to a great day!
