The Redesign workshops that I have been in over the last few weeks have been nothing short of amazing. This new level of self-awareness has really allowed me to take inventory of what I want for my life. It has also presented quite a bit of resistance for me. For most of my life, the internal dialog centered around worthiness has been a difficult one to silence. We are all worthy of anything and everything that we want...which I have had no problem telling anyone but myself. Not anymore!
One of the goals I have declared is financial freedom. Right now, that looks like paying off our debt. My husband and I have created a budget to help get us there with laser focus and that carries over into my clean eating goals more than I thought it would. With a newly set grocery budget, I still get to make clean eating a priority while also being mindful of my spending.
Pizza - need I say more? This almond flour pizza dough by Simple Mills is one of the cleanest pizza dough mixes on the market. It's also delish! The only things you need are a little apple cider vinegar, olive oil, and water. Throw on some of your favorite toppings and you've got yourself a clean and delish pizza for under $10.
I had an abundance of basil, so we opted for pesto, fresh tomato, and goat cheese on this one. We also love a garlic butter base with some fresh mushrooms, green peppers, and mozzarella. Buffalo chicken pizza with blue cheese crumbles. Marinara with mini meatballs and provolone. Cheeseburger pizza is another good option. The possibilities are endless! Ingredients
2 tbsp apple cider vinegar
3 tbsp olive oil, divided
1/3 cup + 2 tbsp water, divided
1/2 cup pesto
4 oz goat cheese
4 small tomatoes, sliced
fresh basil
Directions
Make pizza crust by following the package instructions.
Evenly spread pesto sauce on the crust, top with sliced tomatoes and dollop with the goat cheese. Return to the oven and continue to bake for 10 minutes.
Top with additional fresh basil if desired. Slice and serve.
