I know that I have a few oatmeal recipes already this month, but stick with me. Have you ever had baked oatmeal? How about baked oatmeal that tastes like pie?! I am obsessed with this recipe from @onelovelylife1 for a few reasons.
Reason 1: In our house, we are up and out the door at 5am, so breakfast needs to be easy to grab or we end up skipping it. Not good! We usually find that we like to throw something together that we can use as breakfast all week long. This baked oatmeal is perfect for that.
Reason 2: These ingredients are always in my house, so this recipe is one I come back to time and time again. It also doesn't get much easier - throw everything in a bowl, mix together, and bake.
Reason 3: Who doesn't love pie?! Homemade whipped cream is totally not necessary, and is not something we usually do with this one. The smell ended up filling the house and so when you decide to have a "piece of pie" for dessert, it seemed like the thing to do.
Ingredients
2 cups oats
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
2 cups milk
1 egg
1 1/2 tsp vanilla extract
4 tbsp butter, melted, divided
1/2 cup maple syrup, divided
1 cup pecans, roughly chopped
Directions
Preheat oven to 350° and lightly grease a casserole dish.
In a large bowl, combine the oats, baking powder, cinnamon and salt.
Add in the milk, egg, half of the syrup, half of the melted butter and vanilla. Stir to combine. Pour mixture into the casserole dish.
In a small saucepan over medium low heat, add remaining half of butter and syrup until melted. Turn off the heat and add chopped pecans. Stir to coat.
Evenly distribute the pecans over the top of the oatmeal mixture.
Bake for 30 minutes or until the oatmeal is no longer runny and the top is browned. Let sit for 7-10 minutes before serving (if eating immediately) or let cool completely before transferring to individual containers for the week.
