"Shawarma" Bowls

I love Mediterranean and Middle Eastern food. A good gyro or some chicken shawarma makes my soul happy. There is something about the smell of meat on a spit that really sets my senses on fire. Throw in some good herbs and a cucumber tzatziki sauce and you've got yourself a party! These two cuisines compliment each other really well, so I went with a mashup.

While I have yet to find a clean pita bread, I decided I wasn't going to let that keep me from enjoying my favorite cuisines! When I saw this seasoning blend at Whole Foods, I knew it had to come home with me. How had I forgotten about shawarma?! Made up of coriander, cumin, onion, garlic, bay leaf, pepper and turmeric - it's all the best spices in one yummy mix!

A bag of cauliflower rice from the freezer, some ground beef, a few veggies and a sauce that will knock your socks off...what else do you need?! This is another one of those quick weeknight meals that won't break the bank. Just know that the garlic leaves some serious dragon breath, so plan your smooching accordingly 😘.

Ingredients

  • 1 lb ground beef

  • 1 tbsp olive oil

  • 2 tbsp shawarma seasoning

  • 8 oz sour cream

  • 1 English cucumber, divided

  • 1 medium lemon, zested and juiced

  • 2 cloves garlic. grated

  • 2 tsp dill

  • 2 oz feta cheese, cut in hunks

  • 4 small tomatoes

  • 12 oz bag frozen cauliflower rice

  • salt

  • pepper

Directions

  • Cut the cucumber in half. Dice one half and set aside for topping. Grate the other half of the cucumber and squeeze out excess liquid.

  • Add sour cream to a bowl. Mix in the shredded cucumber, lemon zest, lemon juice, dill and grated garlic. Set aside or refrigerate.

  • Heat olive oil in a skillet over medium high heat. Once hot, add the ground beef and start breaking up the meat with a wooden spoon. Once broken up, add shawarma seasoning and stir to coat. Cook until browned. Remove meat from skillet and set aside, leaving the rendered fat behind.

  • Add cauliflower rice to the same skillet. Season with salt and pepper and cook until water evaporates and the "rice" is warmed thru.

  • Assemble your bowl! Layer the cauliflower rice with the shawarma mixture. Top with tzatziki sauce, cucumber chunks, tomatoes and feta. Drizzle with Primal Kitchen Greek dressing and/or parsley if desired.
