Tacos are one of those foods that I could probably eat every day and never get sick of them. There are an unlimited amount of options that you could easily have a different taco every single day. This is my go to protein for tacos because it's so flavorful and so easy. With nothing but the meat and sauce or salsa, coming home to dinner already made has never been easier. This is my last crockpot recipe this week, and I have saved the best for last.
Dinner for four, under $20, and only five minutes of hands-on kitchen time. What's not to love?! This pork tenderloin that I got from Butcher Box is one of my favorites because it's humanely raised, doesn't contain any weird solutions to keep it fresh, and is super affordable. Right now, you can get a 14 ounce tenderloin for $9 - that's a great deal! If you are not a pork fan, switch this out for chicken. You'll be just as happy.
I like to set up a self serve taco bar with some tortillas, cheese, sour cream, cilantro and hot sauce. Put out some Siete tortilla chips and guacamole on the side. Minimal dishes, everyone can make their tacos the way they want, and clean up is a cinch. This family meal is a win-win and comes together really quickly! You can easily use this meat in other ways too. A few ideas that immediately come to mind are burrito bowls, enchiladas, or a good breakfast scramble.
Ingredients
14 oz pork tenderloin
8 oz green enchilada sauce or green salsa
1/4 cup water
Directions
Add pork, sauce, and water to crockpot. Cook on low for 6-8 hours. Shred and serve.
