These next few days I am taking a class that keeps me tied to my computer for twelve hours a day. This allows me to roll out a few of my favorite crockpot recipes and I couldn't be more excited! As you can tell, I love hands off cooking. Crockpots can be a huge kitchen asset, especially when I know I won't have time to cook. It is one of the things that directly impacts my ability to have food ready and keep me on track.
I have fond memories of my mom's beef stroganoff. It is still one of my favorite things that she makes. While she uses steak, which is more traditional, I have found that ground beef can also be delish and more cost effective. I also find that the ground beef works better with the crockpot application. Stew meat is also a great choice for this one.
I'm not sure about you, but there are a few things about crockpot meals that I don't love. The crock is usually a pain to clean and the visual appeal to most crockpot meals can leave something to be desired. A few helpful tricks include spraying your crock with avocado oil to make the cleanup easier. I also recommend having fresh herbs on hand. Herbs are a cheap and easy way to add elegance and flavor to a typically lackluster looking meal.
Ingredients
2 lbs ground beef (or stew meat)
2 tsp italian seasoning
2 tsp paprika
salt
pepper
2 + 1/2 cups low sodium beef broth, divided
1 cup sliced fresh mushrooms
1 tbsp cocount aminos
1 tbsp garlic, minced
tbsp dijon mustard
4 tbsp arrowroot starch
1 cup sour cream
6 oz softened cream cheese (or goat cheese), cubed
8 oz pasta, cooked
Directions
Lightly spray your crock with avocado oil, then add beef. Generously season with salt and pepper.
In a measuring cup, whisk together 2 cups of beef broth, dijon mustard, garlic, Italian seasoning, paprika, coconut aminos, salt and pepper.
Add mushrooms on top of the beef and pour liquid over everything. Cover and cook on low for 6-8 hours.
During the last 30 minutes of cooking time, whisk the arrowroot starch in 1/2 cup of beef broth and add to the crockpot. Add in the cubed cream cheese and sour cream. Mix until completely combined and turn the setting up to high. Cook pasta according to package directions.
Serve over cooked pasta and garnish with some fresh dill or parsley.
