One of my favorite meals as a kid was grilled cheese and tomato soup. It was a winter staple in our house, and an easy meatless dinner on Friday's during lent. Something about dipping a gooey cheesy sandwich in a rich tomato broth is so comforting.
I had no idea that tomato soup came from anywhere other than a tin can with a red and white label on it. Had I realized how easy it was to make your own, I would have been doing this years ago! It so much more flavorful, and the clean ingredients make this one a win for everyone.
I used some amazing sourdough from Organic Bread of Heaven and Irish cheddar from Aldi to make a grilled cheese sandwich. It was so good! If you decide to give their bread a try, you can use my coupon code kateandersen for 10% off your first order.
Ingredients
3 lbs fresh tomatoes (I like Romas)
1 pint cherry tomatoes
1 small yellow onion
5 cloves garlic, peeled
2 tbsp olive oil
2 tbsp butter
2 tbsp flour
1 quart chicken stock
salt
pepper
Directions
Preheat oven to 450°. Quarter the onions and tomatoes and add to a large bowl. Peel and add the garlic cloves. Drizzle everything with olive oil and season with salt and pepper. Toss to coat.
Evenly spread the tomato mixture onto a baking sheet lined with a silicone baking mat (or lightly grease the baking sheet) into a single layer. Roast for 15 minutes.
Remove from oven, stir gently, and roast for an additional 15 minutes.

In a large pot, melt the butter over medium high heat. Add the flour, whisking constantly until a roux is formed, about 1 minute. Add the chicken stock and whisk to combine.
Add tomato mixture to the pot and whisk to combine. Cook over medium low heat for 15 minutes. Taste and add salt and pepper if desired.
If you are going to make a grilled cheese, do so while the soup is cooking. Serve and enjoy! I also like to top our soup with a little freshly grated parmesan cheese. It adds a nice saltiness. Be sure to dunk your sandwich 😃
This soup is also great with basil and/or heavy cream added.
